I have 1.1m in the bank for a Gomez upgrade which is my transfer this week.
The question is do I leave the money in the bank to go towards getting Aguero back in later and get a cheap defender for Gomez?

Absolute coin toss! As you say, Payet has been such a consistent scorer for us, it's hard to lose him. But Mane as the potential to score multiple goals in a GW.

I would never have jumped onboard Wijnaldum personally. Good player, but stats skewed by the 4 goals and is too inconsistent. Consistency is key in this game.
