Good question .... it must look at home pitch, touches in the box over last few games, shots on goal, conversion rate, chances created, key passes, etc...
It crunches untold variables and it is all logic. No subjectivity involved, uses the same formula week for last Two seasons

De Boer was mentioning in his press conference about asking his players to play long balls against Huddersfield. Palace will show more fight against Liverpool imo.

Don't know about hoffenheim's record but they were trying to play against Liverpool yesterday which is always an advantage for Liverpool. It's easier to shut the shop against them and win the game which can be done this week.
